Sometimes looking at someone else go through it in front of you makes it easier to learn something.
Here are some video links I've come across that may help you get started.
ArgoUML
Generally considered the most complete open source UML package.
Was the foundation for Poseidon's offering.
First of all, its documentation is ... not really geared at beginners.
Its a very complete package, the number of options even daunting in many ways -- even to users who have used UML for a while -- but the programmers are such sticklers for standards, that learning to use this program can only help you to write better UML in the long run...even if the learning curve can feel be steep at times.
If you are looking for something simpler, just to learn and play around with UML, consider UMLet or OODesigner -- when ready to document real projects you may come back to ArgoUML for the export functions, etc.

BOUML
Someone recommended me this one -- but I havn't had a chance to try it yet (Nov 08). Looks good.

OODesigner for UML
A lighter tool than ArgoUML.
Often compared to UMLet.

SmartUML - FreeHand drawing of UML
Beta (Nov 08). Appears to allow you to hand-draw Use Case and Class diagrams.
Not sure if its still an alive project?
Compare it to SketchUML.

UMLet
A fantastic small tool to draw UML diagrams. Definately check it out.
Note: often mentioned in the same breath as OODesigner for UML
